Matty's World Merch: http://bit.ly/4fPicI2 Matheson Cookware: https://bit.ly/4p9XK9p Join this channel to get access to perks: https://www.youtube.com/channel/UCpqH8-BBNTsluhcOzFKWLuw/join INGREDIENTS Smoked Salmon Bagel 1lb Salmon 1 Jar MFC Sweeter BBQ Seasoning (or your favourite sweet bbq seasoning) 1 Bottle MFC Maple Molasses BBQ Sauce (or your favourite sweet bbq sauce) 2 New York Style Everything Bagels ¼ Red Onion ½ Cucumber 1 Clove Garlic 9 Pieces Scallion 1 Tablespoon Soy Sauce 1 Tablespoon Black Vinegar 1 Teaspoon Toasted Sesame Oil 2 Tablespoons Fish Sauce 1 Lime ¼ Cup Sesame Seeds ¼ Cup Dill, finely chopped 2 Cups Philadelphia Cream Cheese ¼ Cup Whole Milk Smoked Steak Sandwich 2lb Ribeye Steak 1 Jar MFC Original BBQ Seasoning (Or your favourite bbq seasoning) 4 Kaiser Rolls 2 Medium Spanish Onions 1 Jalapeno ¼ Cup Cilantro, finely chopped 2 Cloves Garlic 2 Tablespoons Red Wine Vinegar 2 Tablespoons Extra Virgin Olive Oil 1 Teaspoon Kosher Salt ¼ Teaspoon Freshly Cracked Black Pepper 1 Lemon Unsalted Butter COOKING METHOD Smoked Salmon Method Cucumber & Red Onion Slaw 1. Thinly slice the red onion, cucumber, and 6 scallions. 2. Combine in a bowl with: - 1 Tablespoon Soy Sauce - 1 Tablespoon Black Vinegar - 1 Teaspoon Toasted Sesame Oil - 2 Tablespoons Fish Sauce 3. Add the zest of 1 lime and juice of ½ lime. 4. Adjust seasoning to taste. 5. Reserve until needed. Scallion & Dill Cream Cheese 1. In a bowl, combine: - 2 Cups Philadelphia cream cheese - 3 Pieces Scallion, Finely Chopped - ¼ Cup Dill, Finely Chopped - ¼ Cup Whole milk 2. Mix thoroughly until smooth and well combined. 3. Reserve until needed. Smoked Salmon Bagel 1. The night before, season salmon liberally with MFC Sweeter BBQ Seasoning (about 4 tbsp). Place on a tray with a wire rack and refrigerate overnight. 2.Preheat a smoker to 375°F. 3. Place salmon on the smoker, skin-side down, and cook until the internal temperature reaches 120°F. Remove from heat and transfer to a tray with a wire rack to rest. 4. Brush the salmon liberally with MFC Maple Molasses BBQ Sauce while resting. 5. In a sauté pan over medium heat, toast ¼ Cup Sesame Seeds until golden brown. Remove from heat and toss with 2 tbsp MFC Sweeter BBQ Seasoning. 6. Cut bagels in half and place cut-side up under the oven broiler. Toast until golden brown, about 2 minutes. 7. To assemble: - Spread a generous amount of Scallion & Dill Cream Cheese on each half of the toasted bagel. - Place half of the cooked salmon on the bottom half. - Top with 2 tbsp Cucumber & Red Onion Slaw. - Sprinkle it with the Toasted Sesame Seeds. - Place the top half of the bagel on and press lightly. 8. Serve with extra MFC Maple Molasses BBQ Sauce on the side. Prime Rib Sandwich Method Chimichurri 1. Preheat a smoker to 375°F. 2. Cut 2 medium Spanish Onions in half and season the cut sides with salt. 3. Place onions in the smoker, cut side up, and cook until soft and caramelized, about 30–40 minutes. 4. Allow the onions to cool, then finely chop. 5. In a bowl, combine: - Chopped smoked onions - 1 jalapeño, finely chopped - ¼ cup cilantro, finely chopped - 1 clove garlic, finely grated - 2 tbsp red wine vinegar - 2 tbsp extra virgin olive oil - 1 tsp kosher salt - ¼ tsp freshly cracked black pepper 6. Mix well and adjust seasoning to taste. 7. Reserve until needed. Smoked Steak Sandwich 1. Preheat a smoker to 375°F. 2. Generously season the ribeye steak with MFC Original BBQ Seasoning (about 4 tbsp). 3. Smoke the steak, flipping every 5 minutes, until the internal temperature reaches 125°F. 4. Transfer to a tray with a rack and rest for at least 15 minutes before slicing. 5. Cut 4 Kaiser rolls in half and place cut-side up under the oven broiler. Toast until golden brown, about 2 minutes. 6. While the buns are still hot, spread 1 tbsp of unsalted butter on each half and rub vigorously with a garlic clove. 7. Slice the rested steak thinly and divide it evenly among the 4 bottom buns. 8. Top each portion of steak with a generous spoonful of chimichurri. 9. Place the top buns on and serve immediately.
