RECIPE
GARLIC SAUCE
Ingredients
1/2 cup peeled garlic cloves
1 tsp salt
1/4 cup lemon juice
1 1/2 cup neutral oil, like grape seed or vegetable
Directions
1. Add garlic cloves and salt to the food processor. Pulse until it becomes finely minced.
2. With the food processor running, pour in 1-2 tablespoons of oil, scrape down the sides of the bowl. Repeat until the garlic looks creamy and emulsified
3. While the food processor is still running, pour in a few tablespoons of oil, then alternate to lemon juice until all the ingredients are incorporated
4. Transfer mixture to bowl with no lid and let rest for a few hours or overnight in the refrigerator.
FALAFEL MIXTURE
Ingredients
4 scallions
1/2 cup flat parsley
1/2 cup curly parsley
1/2 cup cilantro
1/2 cup mint leaves
5 garlic cloves
3 tbsp ground cumin
2 tbsp coriander
1 tbsp cayenne
1 tsp salt
1 tsp ground pepper
Zest of 1 lemon
2 cups chickpeas, soaked overnight
Oil for frying
Directions
1. Place all the ingredients, except the frying oil, in a food processor and blend until a smooth even paste forms.
2. Form patties out of the paste, about 2 tablespoons each.
3. Heat oil in a frying pan over medium high. Fry the patties in batches until they’re brown and crisp, about 2 minutes flipping halfway through.
FALAFEL ASSEMBLY
Ingredients
2 cups white cabbage
1 cup cucumber
1 cup tomato
1/2 cup pickled hot peppers
1/2 cup pickled turnip
1/2 cup pickles
1/2 cup finely chopped red onion
1/2 cup curly parsley, chopped
1/2 cup mint, chopped
1/2 cup cilantro, chopped
3-4 tbsp olive oil
Juice of a lemon
salt and pepper
Pitas
Falafel balls
Garlic sauce
Directions
1. Combine cabbage, cucumber, tomato, peppers, turnip, pickles, red onion, parsley, mint, and cilantro in a bowl. Dress with olive oil and lemon juice and stir to combine. Season with salt and pepper.
2. Soften pitas by steaming them. Place a cooling rack over a pot of steaming water. Place the pitas on the rack one at a time. Steam until soft and warm.
3. Smear garlic sauce on steamed pita, then scoop a few spoonfuls of salad on to the pita and top with three or four falafel balls. Roll up pita. Enjoy!
